Mommy's Little Helper

I am part of this wonderful group of Mom's that exchange freezer meals once a month.  Last week when I was making my enchiladas for the exchange Carli wanted to help.  She put on her apron and got to work.  She is such a great littler helper.  She loves working in the kitchen with me.  I am always glad to have her company and help.

This is a great receipe to double and put one tray in the freezer for later:

about a 1/2 bag of CKN tenders cooked and cut up
1 can cream of CKN soup
2 c cheese
2 c sour cream
1 can green verde sauce
1 can olives
1 onion chopped (optional)
6-8 large tortillas

mix soup, sour cream, 1c of cheese and CHK in bowl.
dump 1/2 can verde into large pan
dip tortilla in verde sauce fill with mix, roll
repeat with all tortillas
cover w/ remaining verde sauce and cheese and olives
cook at 350 about 15 min until warm

Okay, I'm actually going to try making it myself now that you've written down a recipe. Wish me luck!
